Our fourth category that was evaluated is was Bone-In Hams. Hams can be of any weight and will consist of only light cured, commercial bone-in style. Hams may or may not be tenderized, and consists principally of pumped hams which require refrigeration.The judges evaluated external appearance before cutting the hams in half, and then looked at internal appearance, specifically surface texture and lean to fat ratio. For the edibility portion, judges evaluated the aroma and flavor both cold and heated.The Grand Champion of the Bone-In Ham category goes to Meat Master Processing from Stockton, IL!
